soak rice over night and grind, add rice powder to make it little thick batter, add 2 tb sugar, and ferment it, and keep it in fridge, put it outside at night to remove its coolness , for the next day morning preparation, next day morning grind coconut and blend , cook 1tb riceflour in 1 cup water, cool it , add this and coconut paste to the batter , add 1/2 tsp baking soda to this, with necessary amount of sugar, and pinch salt , mix well ,wait for 15 minutes after that make vattayappam , steam for 20-30 minutes, after 20 minutes, open the lid little so the steam will escape, and fall on the appam and keep it dry, can sim the flame after 15 minutes with a small gap of steam escape .
