orange chocolate cake

CHOCOLATE ORANGE CAKE

Ingredients
•4 large eggs
•150g caster sugar
•190g plain flour
•50g cocoa powder
•1 rounded tsp baking powder
•100ml mild, light olive oil
•Grated zest of 2 oranges
•Juice of 1 orange

For the icing:
•75g softened butter
•175g icing sugar, sifted
•100g plain chocolate, melted
•25g plain chocolate, chopped
•Orange zest to decorate (if desired)

Mama's Guide Method:

1. Preheat the oven to 180ºC/Fan 160ºF/350ºF/gas mark 4. Line a 20cm (8-inch) round cake tin with lightly oiled baking parchment paper.

2. Place the eggs and sugar in a large bowl, over a pan of simmering water. Use an electric whisk to whisk the eggs until creamy and thick, enough to leave a trail when the whisk heads are lifted from the mixture.

3. Sift over the flour, cocoa and baking powder and gently fold in. When the flour is almost mixed in, add the olive oil, orange zest and juice and gently fold in.

4. Pour into the prepared tin and bake for 20-25 mins or until the cake is risen and spongy - the sponge should bounce back when lightly touched in the centre. Cool in the tin for 10 mins before transferring to a wire rack to cool.

5. For the icing, cream the butter and icing sugar together with an electric whisk until fluffy. Add the chocolate and whisk again until smooth.

6. Spread the icing over the top of the cold cake, then decorate with the chopped chocolate. Serve in wedges decorated with orange zest if desired.

Vattayappam

1 cup raw rice
soak rice in water for 8 hours or over night, grind well with 1/4 cup water
2 cup rice flour
add 3 cups of water slowly and mix with a whisk.
1 cup coconut,
grind coconut
1 bowl of vellayapam or vattayappam batter of the last,, that is the last extra batter, washed with little water and collected in a bowl and keep in fridge for next weeks use.
grind rice smooth, add coconut and grind coconut with rice very well, add rice flour paste to this and again grind for better mixing
Remove 2/3 of this ground batter to a big bowl
To the 1/3 of the ground batter in mixie add the remaing flour mix and vellayappam batter, and 1/2 cup sugar, 2 pinch salt and grind well.
Mix all batter well with hand, cover and keep in warm place, In cold countries keep in sun, till rise or keep in oven after preheating for 5 minutes for the whole night or 8 to 24 hours means till the batter rice.
After risig mix the batter well and add 1/2 cup extra sugar as necessary, and mix well, again keep it for 1 hour till rise, Use the top rise batter, without stirring for making vattayappam.

microwave give us the facility of steaming
Grease a microwave vattayappam bowl, pour the top batter and microwave at 720 W or 540Wcentigrade for 10 minutes.
when sides of the vattayappam detach from the bowl it will be cooked and take out side.
wait for 10 minutes to cool and detach from the bowl.
can make vattayappam at 900 W, but 720 or 540 is more best
cooking time depend on thickness of batter, it will be 5 to 10 minutes.

My christmas dishes

How I celebrated christmas
I made cakes
vellayappam and beef curry
cutlet, fish fry, chicken biryani

Cutlet
1/2 kg keema/minced beef
or 1/2 kg beef
1/2 tsp each, chilly powder, garam masala, coriander powder,
wash beef add salt, chilly powder, coriander ,turmeriic, garam masala, pressure cook for 20 minutes after 1st whistle , with 1 tea cup water. strain water and grind in a mixer.
heat a pan add oil, saute onion, ginger garlic green chilly, add chilly, coriander ,garam masala and saute add salt and minced meat, saute and dry the meat without water add mashed potato, add 2 tb corn flour and 2 tb bread powder and mix well. make small balls and give flat round cutlet shapes to each, dip in egg beated and again dip in bread powder, shallow fry cutlets
potato beef mix will broke during frying, so add corn flour and bread flour to hold the structure.

for chicken cutlets
cook chicken instead of beef  and remove bones and grind meat
for chicken it will cook in 2 whistles. waiting time is needed
for mutton cutlets
cook mutton instead of beef

Fish fry
1kg fish any big fishes
Cut fish wash and strain
add 2tsps, chillypowder, 1tsp coriander powder, 1/4 tsp turmeric, 1 tsp salt, 1tsp green chilly ginger paste or crush, 2 tsp lemon juice 2tsp corn flour and mix well. after 30 minutes shallow fry.

chicken biryani

chicken fry
1 kg chicken cut, wash and strain
To this chicken add 2 tsps chilly powder, 2 tsps coriander powder 1 tsp garam masala,1tsp salt and mix well, add crushed ginger garlic green chilly 2tsps, 2 tsps lemon juice, 2 tsps cornflour and mix well. after 30 minutes fry chicken in 2 batches.
In a heated pan add little more oil/60 gm add long slice of  6 big onion and saute brown, remove this,
Use this oil for frying chicken.

for garnishing
add 1 teaspoon ghee in a pan and fry 100 gm cashew long slices/ split cashew into two
mix 1/ 2 of the browned onion with fried cashews and 100 gm raisins

 grind 5 tomatoes,
grind/crush 5 green chilly, 5 garlic, 1/ 2 inch ginger
slice 1 onion with little salt and saute in 3 tb oil ,add ginger garlic, greenchilly paste, curry leaves, pudina leaves add crushed (cloves 3, blackpepper 8, elaichi 3, cinnamon 1 small piece) and saute add chilly powder 1 tsp, coriander powder 1 tsp,  turmeric 1/4 tsp, garam/meat masala 1tsp saute add ground toto paste and saute, add 1/4 of browned onions,  add small pieces of fried chicken to it  and cook thick and little watery.
For cooking and layering rice

Wash 1kg long grain rice or 4 cups of rice
Boil 8 cups of water, to this add 2tsps salt, 1/2 tsp jeera, 3 clove, 3 elaichi crushed, 8-10 black pepper not crush, 1 cinnamon, 2 bay leaves (I have done without bay leaves and cinnamon) boil water add rice and again boil rice. after a good boiling cover with lid, and slow cook for 10 minutes and switch off flame. After 10 minutes open the lid and stir carefully. keep the lid open and cool in open area other wise the rice will cook more
For layering rice
Remove the rice to another pot, Add 2 tb hot oil /ghee to pot spread every where, Add 1-2 tbsp boiled water (other wise the gravy will burn at bottom on baking) and 1/4 of tomato gravy, layer rice and gravy 3 times, use little rice to clean the oils, and gravies of the pot 2spread this rice on the top, sprinkle 1/2 tsp sugar , 1/2 tsp salt, 2 tsps of lemon juice, 3 tbsps of ghee, 2 tbsps each of pudina leaves, curry leaves, dhaniya leaves, 1/4 of browned onions on top of rice one by one. cover
Place 2 tawas on flame and place rice for baking on tawa, and cover with lid put weight on the lid like stone mortar heat on high flame for 2 minutes and then slow the flame for 5 minutes touch the sides of the pot and check, is it very hot, after attaining a high temperature on sides of the pot switch off the flame. wait for 15 minutes and mix the rice carefully. so the flavours of the rice will mix properly. again cover the lid and bake for  2 minutes high flame and then slow the flame for 3 minutes or sides will be very hot switch off the flame and wait for 15 to 30 minutes and serve.


 Remove 1/3 of plain rice  before layering.add this to whenever necessary to get white color between colors of biryani, or to adjust flavors of biryani for those who like plain rice or less biryani flavor
how to serve biryani
Dry plates with a towel,
serve biryani to plates, top of it, sprinkle/spread with a mix of brown onion cashew raisin mix with 2 fried pieces of chicken, 1 fish fry, 1 cutlet ,1 tsp mango pickle, 2tb curd or raita on sides
with 1 tsp mango pickle, and curd or raita
This biryani is easy to make and flavors are best than any other biryanis.
I had tested many varieties of biryani but this has the real flavor of biryani and easy to make,

Beef curry and vellayappam
Beef curry
wash 1kg beef add 1tsp salt 1/4 tsp turmeric, 2 tsp chilly powder, 2 tsp coriander powder, 1tsp  garam masala, 2 tsp ginger garlic green chilly paste, 2tsp oil mix all well. wait for 10 minutes and cook with 1cup water, after 1st whistle cook in slow flame for 20 minutes.switch off flame. after 10 minutes open the lid.
Heat a pan add 3 tb oil saute 1 onion brown, add ginger garlic green chilly, curry leaves, pudina leaves of 2 stem crush 2tsp, and saute add crushed masalas (elaichi 2, clove 2 , black pepper 8, 1 inch cinnamon ) 1 bay leaf teared, add 1 tsp chilly powder, 2 tsp coriander powder,(if like less masala only add 1 tsp coriander) 1/4 tsp turmeric, 2 tsp garam/meat masala, then add a paste of  5 tomatoes (grind  5 tomatoes) and saute add 1potato cut into squares, and cook till gravy is thick add this to cooked beef and boil well. After 10 minutes serve, so the flavors will mix properly.

Vellayappam
soak 4 cup rice for 8 hours or overnight
Microwave a small bowl of water for 20 seconds or take luke warm water to this add 1tsp sugar and 5 gm/1tsp yeast mix and cover keep inside oven or in a warm place, after 15-30 minutes it will be bubbled on top
grind 1 coconut/2 cup grate with 1/2 cup water
grind rice with little water, for 1 cup rice 1/4 cup water is maximum, for 4 cup rice water content is 1 cups
can add coconut water also
From this batter take 4tb batter to 2 cup water and mix well and cook slowly not burn, cool this  kappi add 4 tb sugar,2 pinches of salt and yeast water mix with ground coconut and again grind smooth
Mix this with rice ground with hand, cover and keep in hot place for 8 to 12 or 24 hours depend on temperature
cold countries it will take 2- 3 days depend on climate/temperature
To reduce this time keep in preheated oven, or keep in hot sun or covered with wool clothes and keep in air tight non used plastic buckets with lid,
After rising mix the batter add necessary sugar, elaichi powder, for making vattayappam wait for 1-2 hours for to rise again, this will give soft vattayappam, grease a plate and pour the batter and steam for 20 minutes or microwave in a microwave safe bowl with a shape of vattayappam grease and pour and steam at 720 w for 5 to 10 minutes , after microwave cooking it will detach from the sides of the bowl. cool 15 minutes

For making vellayappam, not add sugar, if necessary add little sugar and a pinch of salt add water as necessary like dosa batter and make vellayappam

starter options for yeast

1 bowl of sour buttermilk or
last batter of vellayappam or vattayappam kept in fridge
coconut water with 1tsp sugar keep for 3- 4 days
coconut water, sugar yeast can also keep for 3-4 days

vattayappam with rice flour

how to bake a cake detailed
do's and don'ts of a cake

1 cup/250 gm flour
1 cup sugar powder
1/2 cup oil/butter/ghee
1 cup milk/buttermilk

1/2 cup milk and 1/2 cup eggs( 2-3eggs)
or
1 cup eggs (5-6eggs)

1 cup dry fruits and nuts chopped mix
1/4 tsp coffee powder
1tsp bakingpowder
2 pinch soda
2 pinch salt
1 tb cocoa powder
1/4 tsp spice mix

Mix and sieve all dry powders
mix all liquids in a grinder and grind thick
mix wet and dry mix slowly with a whisk or (in a mixer or in a food processor, or use electric beater)
grease a baking pan spread some flour above it or place a parchment paper/trace paper at bottom and pour the batter to the pan and decorate on the top with some nuts and colored tutti fruity or cherries
preheat oven at 200 degree centigrade or 180 degree my oven is big not work in
bake at 200 degree centigrade for 25 to 35 minutes or till cook, check the centre with a pointed stick or knife, if cooked, it will not be sticky.

easy method of mixing
put sugar/jaggery powder in a mixer and grind and soda , salt, baking powder, cocoa, coffee powder , spice mixes, and flour grind again remove it to a bowl
again blend eggs and add oil and milk and blend well
add liquids slowly to the dry mix and whisk properly add dry fruits and nuts and mix with a flat laddle/big spoon
drop the batter to prepared pan and tap it and rotate to left side slowly,small bubbles will be seen, do it 3-4 times, so the cake will rise uniformly on baking.
microwave cake

grease a microwave bowl
pour this batter to microwave safe bowl with cake shape/ round/square  and microwave for 720W or 900W for 6- 10 minutes, or less look at the sides of the bowl , the cake will detach from the side of the bowl, is  rightly cooked, don't cook more
720 W is the best temperature, 900W also works
cool the cake and detach from the bowl
Can serve this kind of cake,

combination of microwave and grill or bake cakes

grill or bake the microwave cooked cake for 5-10 minutes will give cake dry cake texture
it reduce timing for making cake

pressure cooker cakes

for this remove rubber and whistle from the lid of pressure cooker
pre heat pressure cooker with salt or clean sand in high flame for 5-10 minutes with a flat plate or stand for baking tray
pour the cake batter in prepared tin and tap properly and put in pressure cooker, and cook in slow flame for 25 to 30 minutes check with a knife in the centre, if not cooked, increase cooking time and check after 10 minutes.

for cutting trace paper

for this take back round of pan and put the paper on it, and cut on its round, or cut square paper for the length and width of the pan, and fold it  in the centre again and again 4 times and measure from the centre of the pan to edge and cut, it will also give round shape to the paper.

Can increase baking powder upto 1.25 tsp for 1 cup flour

deep brown color to cakes

for deep brown color, burn 1/4 cup sugar in a pan add  1 cup water to it slowly, be careful doing this, other wise splash to face and eyes, or keep spectacles
to this add 1tsp coffee powder and mix well.
and use this 3tsp for each cake
can add cake spice 1/4 tsp

cake spice mix

Itsp clove, 1 tsp dry ginger, 1 tsp elaichi, 1 tsp cinnamon, grind to powder and store use 1/4 tsp  or less per cake mix
can use 3/4 cup jaggery powder and 1/4 cup sugar powder instead of 1 cup sugar

normally melon and tils are not using but using it will give a crunchy taste to the cake

add 1tsp maida/flour to the nut fruit mix and mix well add this to the cake batter, so the nuts will not sink to the bottom of the cake

for 1 cup flour add 1.5 cup liquid total , it will be milk, egg , oil
the liquid combination will be milk and oil, or egg and oil or egg milk oil

adding more cocoa powder increase the chocolate flavour of the cake
for this 1/2 cup flour and 1/2 cocoa powder or 3/4 cup flour and 1/4 cup cocoa powder, or simply increase the cocoa powder to 2-3-4 tbsp
adding more soda increase biggest bubbles/biggest pores in cakes, and more spongy texture
adding baking powder only give small pores/and give real cake texture.

grind one orange or take orange juice, and add to cake in place of milk, soak dry fruits and nuts in orange juice minimum for 24 hours to 1 week  and slice orange skin to small pieces 1 tb also add to cakes.

some people use alcohol rum/brandy/ whisky/ or use orange juice to soak dry fruits and nuts for months or minimum 2 weeks and also pour alcohol after baking cakes repeating it after 2- 3 days for 3 times and stores well for months.

how to cook pulav rice/veg biryani in a pressure cooker or a pot

I measured 2.5 cups of  basmati small broken rice .you can use anykind of rice means medium broken rice or long basmati rice
water 5 cups
I chopped little ginger, fresh turmeric, green chilly, 1 onion
little amarapayar/beans, carrot
and taken one tea cup of deshelled green peas/ matar
and chopped red capsicum
1 lemon juice, my lemon is big and have got alot of juice from 1/2 of lemon
take leaves of curry leaves of 2-3 stems
Heat pressure cooker / or a pot you like add 3 tb/30 ml oil to it, add some mustard, jeera after that add onion slices saute it add ginger, green chilly, turmeric saute with little salt, add curry leaves,  masala (crush 2 cloves, 2 elaichi, 5 black pepper)  1/4 tsp chilly powder, vegetables one by one,
I had added green peas, amarapayar, carrot, capsicum, saute for 2 minutes, add rice salt, water, lemon juice of 1 lemon and boil well. cover the pot and cook for 10 minutes in slow flame. and switch off the flame. After 10 minutes, mix the rice with a flat laddle, carefully. cover and again reheat the pot for 2 -3 minutes in high flame. when touching the sides of the pot it will be very hot.  switch off the flame. and wait for 20- 30 minutes and mix the rice and serve.
Serve the rice with pickle, pappad, raita or curd.


How to cook basmati rice easily

wash and strain 2 cup rice
boil 4 cups of water add salt, lemon, 1 tb oil/ghee, any maslas like clove, jeera, elaichi if you like add boil water add rice and boil well. cover with lid and cook in low flame for 10 minutes and switch off flame. wait for 10 minutes and open the lid. and stir well care fully. Again reheat the rice pot in high flame for 2 minutes or the sides of pot is very hot and switch off the flame. after 20 minutes again open the lid, stir and serve.
No need of soaking.
Any kind of basmati rice will work means small broken rice, medium broken rice or long non broken rice also work by this method.
can cook rice by this method in a normal pot or pressure cooker.
No need of counting whistles.

Roti / Chappathi/paratha

How to make good roti/chappathi/paratha

Jeera, ajwain roti

jeera 1/2 tsp
ajwain 1/2 tsp
sedha namak 1/4 tsp
table salt 1/2 tsp
atta 2 or 3 cup
oil 1tbsp for kneading

water as necessary
Take all above items in to a bowl add water 1/2 cup add atta as necessary/3 cup and mix. add water as necessary to hold atta and knead well. The dough will be soft and smooth. if sticky add little atta and knead well. Divide the dough into 3 parts. roll each into long roll, and each roll  cut into small pieces needed for 1 roti, knead each pieces in hand and make balls. Cover this for 10 to 20 minutes.
Heat tawa in high flame till very hot or smoking, make roti and cook each side.when bubbles appear on roti, turn it, cook on other side and apply 1tb/10ml oil on one side and spread well. and cook, turn and do this again for the other side also and cook, The roti will be very crispy by heating /cooking with oil. And also very tasty, Serve hot and fresh.

Crush elaichi, clove, pepper, ginger powder Add this to water and boil 4 cups of water add 5 tsps of sugar,
Good for weak people, cough and cold symptoms.

Elaichi tea

Crush 2 elaichi add to water and boil with tea leaves  and sugar

Ginger tea

Slice or grate or crush  1 inch or 1/2 inch ginger  and boil with water add tea leaves and sugar

Ginger powder tea

Add 1/4 tsp of ginger powder to water and boil with tea leaves and sugar

Adding jaggery is best for getting heat also good for health

Now a days we are going to celebrate christmas.
What is christmas?
Christmas is the celebration of the birth of jesus/the saviour
What is the importance of jesus?
Jesus is the son of God, he is the son of a virgin named mary,  born by the power of the holy spirit, the word of God made into flesh.
When we are going/reading through bible we saw the word of God and his power.
The Bible shows us who is God, his words, his power, his character, what he wants from humanity,
why he is doing all this, what God expects from us,
how he made the earth and the world, how he made the man, animals, plants, stars, sun, moon

In the beginning God created heavens and earth
God said let it happen and he made everything in the world like earth, day,night, sea, sky, plants animals, stars, sun, moon

But Jesus came from the word of God not from the earth, so earthly people cannot understand jesus, to understand jesus holy spirit is necessary, that is the spirit of God, The holy spirit will be given by God to those who believe in him, and those who search for him, and those who have faith in him, and those who searching God, in Bible. The common people in earth will not be get the holy spirit. The man will be a doctor or engineer or a king will not get the holy spirit, it is the gift of God, who like God and who searching the true God. Only by the power of the holy spirit, we can understand the hidden meanings of bible words. A common man read it like a story. But the man of Holy spirit know the wishes of God, and hear and understand the messages of God.

PALLAPPAM (Crisp Laced Rice Pancakes)
A classic Kerala bread, this is supposed to have been introduced by the Portuguese centuries ago, from Ceylon. It was for many years a typical Syrian Christian food. It s still served in Christian families for breakfast. It has also developed appeal among other peoples of Kerala too, and is regularly served as a starter for lunch and dinner.
Ingredients


Rice Flour - 1 cupSalt - ½ tsp.Ghee - ½ tspGrated Coconut - ½ cupWater - 2 cups

Method:
• Prepare a thick porridge with the semolina and water. Cool
• Mix together remaining ingredients other than salt; beat in a blender for 2    minutes.(The batter should have a single cream consistency)
• Cover the bowl and prove for 6 to 8 hours
• When double in size, add salt and more coconut milk
• Heat an ‘Appam’ pan, ladle ¼ cup of the batter into the center of the pan
• Lift the pan and swirl the batter a little bit toward the edge of the pan to get
  a thin layer of batter around the center
• Cover the pan and cook 4 to 5 minutes till the center is cooked; the edges   ought to have a golden brown crust
• Use a spatula to gently lift the appam out, so the crust is intact and curved   upwards
• May be served with a Vegetable or Meat Stew

MOPPILAH BIRIYANI
Moppilah is a Malabari term used by local people to respectfully identify Muslims. Traditionally the Muslims served Biriyani on all important occasions. Over the years it has become of very popular with other communities in Kerala. Rice and chicken are baked in rich gravy to produce a highly aromatic and deliciously spicy preparation.
Ingredients
Basmati Rice - 1 kg.
Chicken pieces - 1 kg.
Ghee - 300 gms.
Onions - 500 gms.
Garlic - 100 gms.
Green Chillies - 50 gms.
Ginger - 50 gms.
Cinnamon - 3 pcs.

Cardamom - 6 nos.
Cloves - 4 nos.
Aniseed - 1 tsp.
Caraway - 1 tsp.
Chilli Powder - 1 ½ tsp
Coriander powder - 1 tsp.
Turmeric powder - ½ tsp.
Tomato - 100 gms.
Coriander leaves - 30 gms.
Mint leaves - 30 gms.
Cashews - 50 gms.
Kismis - 50 gms
Salt - to taste.

Method:
   Grind to a paste the ginger, green chilies and garlic

• Peel and slice the onions very thin, also the tomatoes
• Powder the cinnamon, cardamom, cloves, aniseed and caraway
• Combine the chilly, coriander and turmeric powders with the salt and apply    onto the cleaned chicken pieces. Keep to marinate
• In a heavy, moderately deep, vessel, heat half the ghee
• Fry and remove the cashews and kismis / raisins
• Sauté the onions in the hot ghee, when they start turning slightly brown,    toss in the chopped tomato, the fresh ground paste, and half the spice    powder mix
• Stir the whole mixture well and add the marinated chicken pieces.
• Cover and cook. Take care not to overcook
• Bring salted water to the boil in a large vessel
• Pour the washed rice into the boiling water and cook till three fourth done.   The rice should also not be overcooked. Drain
• Into an oven proof dish, spoon in a quarter of the boiled rice
• Place one third of the chicken pieces and pour a little of the gravy
• Sprinkle a little spice powder and few shreds of coriander and mint leaves.    Also a few cashews and kismis/ raisins
• Repeat for the remaining two portions
• Dibble the remaining half portion of the ghee over the last layer of rice
• Cover the dish with a tight lid or with aluminum foil and bake fifteen to
   twenty minutes
• Serve hot. Kept overnight in the refrigerator, the flavors will mellow and the    taste will improve. Reheat in the oven if you do so

LAMB/MUTTON CUTLETS

Ingredients
  • Minced lamb – 500 grams (I used freshly minced lamb from the store)
  • Onion – 2, chopped
  • Ginger – 1 tablespoon, chopped
  • Green chilli – 3-4, chopped (I like it a little spicy)
  • Curry leaves – chopped
  • Garam masala – 1 teaspoon
  • Pepper powder – 1 teaspoon
  • Salt
  • Potato – 1 medium (boiled & mashed)
  • Bread Crumbs – 1-2 cups (home-made or store-bought)
  • Egg white – 1 egg (my MIL uses one whole egg, inclu the yolk….so your choice)
  • Oil for frying
Method
Cook the cleaned minced meat so that all the water absorbs from the meat. And then once cooled, mince the meat using a food processor once again (this is optional..I did it because the meat store didn’t mince it real fine the way I like).
Meanwhile, saute onion till it becomes soft. To this, add chopped ginger, green chillies and curry leaves.
Then, add minced meat. Mix well. Add salt, garam masala and pepper. Stir for another 2-3 minutes and take it off the flame. Allow the mixture to cool.
While that’s cooling, you can boil the potato. How? Well, just wash the whole potato without peeling the skin. And boil it in water for about 20 minutes.. Or else, put it into the pressure cooker for about 4-5 whistles. To test if the potato is done, insert a knife right into the center to see if it’s cooked.  Then let it cool, peel off the skin and mash it using your hand or potato masher. Make sure there are no lumps.
Once the meat’s cooled, add mashed potatoes & mix the entire mixture properly. Check for salt.
Make small balls and then press lightly with fingers to get an oval/round shape. Do all.
In a small bowl, beat the egg white. And in another bowl/plate, put in bread crumbs. For the next step you need both hands. Dip the meat cutlet into the egg-white using your left hand, take it out from the egg using the same hand and place it into the bread crumbs. Now with your right hand, roll the cutlet in the crumbs. When you do this way, you make sure that the crumbs don’t get into the egg-white bowl and vice-versa.
Deep or shallow fry in oil. Serve hot with tomato sauce or with onion salad (thinly sliced onions mixed with salt, a drop of vinegar and chopped green chillies).
Note:
  1. After you’ve dipped and rolled the meat cutlets in egg whites and breadcrumbs, you can freeze them for a month. When you want to make it, just thaw and deep fry.
  2. You can substitute lamb with beef or chicken too. The procedure is the same. If you’re using, boneless meat cubes, then cook them in a pressure cooker and mince well once cooled. And then the process is the same.
  3. You can even substitute it with vegetables (peas, carrots and beans), but then don’t add ginger.

Brown basmati rice pulav

3 cup/600 gm brown rice
 til oil 3 tbsp
mustard 1/2 tsp
jeera 1/2 tsp

ginger 1/2 inch
fresh turmeric 1/2 inch
garlic 5 cloves
green chilly 5
onion 1
curry leaf 2 stem
clove 3
elaichi 2
black pepper 6
turmeric powder 1/4 tsp ( if not adding fresh turmeric)
chilly powder 1/4 tsp
salt 2 tsp(1/2 stp rocksalt/ sedha namak, 1.5 tsp table salt)
vegetables
1 carrot,
1 hand ful green pea,
green beans /amara payar 1 hand pick/10
red capsicum 2
pudina leaves 3 stems
water 6 cups

Soak rice and wait for washing and cutting veg and prepare masalas for cooking and start cooking
this time is needed for soaking rice , it will be 15 to 30 minutes

chop vegetables and others
take leaves of pudina and curry leaves
crush elaichi, clove , black pepper
heat a pressure cooker add oil, mustard, jeera, ginger, garlic, green chilly, fresh turmeric, onion and saute well add curry leaves, pudina leaves clove , elaichi,black pepper, turmeric powder, chilly powder salt vegetables  and saute for 3 miutes and add soaked rice and water boil, cover cooker lid with whistle, wait for 10 minutes in high flame after that switch off flame, and wait for 20 minutes for cooling, after that open the lid and mix the rice carefully
It has a yellow color rice with green and red vegetable colors and very beautiful to see
and also very tasty.
serve with achar/chutny powder, pappad, fresh/dryfish fry

yellow moong dal/red masoor dal curry with carrot and tomato

1/2 tea cup /75 gm yellow moong dal/red masoor dal
1 carrot
1 tomato
5 green chilly
3 stems of curry leaf
1 onion
1/2 tsp jeera
1/2 tsp mustard
1 tsp salt (1/4 rock salt / sedha namak, 3/4 table salt)
2 tsps chilly flakes
6 blackpepper
2 cloves
1/4 tsp turmeric powder
or 1/2 inch fresh turmeric slices
wash dal
chop carrot , tomato, green chilly , turmeric, onion
crush clove , black pepper
heat pressure cooker add 2 tb oil, add mustard jeera onion slices and saute well
add turmeric, green chilly curry leaf saute it, add chilly powder, salt carrot tomato moong dal add water as necessary and pressure cook 1 whistle and wait for 10 minutes to open
For winter/rainy season clove and black pepper give  more heat
can add  garlic, ginger
adding ginger best for summer months, it is cooling
Avoid clove and black pepper, in hot summer months , it will increase more heat to the body
Good for roti, rice
serve with achar, pappad, rice/roti/paratha
red masoor and yellow moong are best for this recipe . Can use anyone for this recipe.
