1 cup raw rice
soak rice in water for 8 hours or over night, grind well with 1/4 cup water
2 cup rice flour
add 3 cups of water slowly and mix with a whisk.
1 cup coconut,
grind coconut
1 bowl of vellayapam or vattayappam batter of the last,, that is the last extra batter, washed with little water and collected in a bowl and keep in fridge for next weeks use.
grind rice smooth, add coconut and grind coconut with rice very well, add rice flour paste to this and again grind for better mixing
Remove 2/3 of this ground batter to a big bowl
To the 1/3 of the ground batter in mixie add the remaing flour mix and vellayappam batter, and 1/2 cup sugar, 2 pinch salt and grind well.
Mix all batter well with hand, cover and keep in warm place, In cold countries keep in sun, till rise or keep in oven after preheating for 5 minutes for the whole night or 8 to 24 hours means till the batter rice.
After risig mix the batter well and add 1/2 cup extra sugar as necessary, and mix well, again keep it for 1 hour till rise, Use the top rise batter, without stirring for making vattayappam.

microwave give us the facility of steaming
Grease a microwave vattayappam bowl, pour the top batter and microwave at 720 W or 540Wcentigrade for 10 minutes.
when sides of the vattayappam detach from the bowl it will be cooked and take out side.
wait for 10 minutes to cool and detach from the bowl.
can make vattayappam at 900 W, but 720 or 540 is more best
cooking time depend on thickness of batter, it will be 5 to 10 minutes.
