keep pineapple skins in a bottle, add water to cover skins add 3 tb sugar cover loosely, allow 2 inch empty space in the bottle, otherwise it will go out, after 2 -3 days , it will become lightly fermented, and become a delicious drink.
Take 1 cup juice from it and drink, add 1cup water and 1tsp sugar to it, every day you can drink this fermented delicious juice for 5-7 days, repeat the process of adding water and sugar daily
after that the liquid go acidic and sour, but you can use this for fermenting milk, dosa, idli, making curd, for making naan, kulcha, bread, bun, soft rotis etc.
I used this for making rotis, it will be very soft
strain after 1 month, and keep the water in a bottle, it will go more acidic and turn vinegar within 2-3 months
