In a measuring bowl/cup pour 1 egg and add water (1 cup -water and egg mix) mix well add 1/2 tsp salt, 1 tsp oil
pour this to big bowl, add same amount of maida /1 cup and knead well after 30 minutes again knead it, between these gap we can cut veggies and make gravy preparation
take another cup of maida for kneading maida little tight, divide into 4 balls, each ball roll into big roti, can make thin rotis, apply more flour not to sticky on each side, make 6 fleats with that roti, cut it thin, and seperate the noodles easly. if flour is less, noodles will stick each other and difficult to seperate.
Sieve the noodles to remove all flours in it.
Boil necessary water , 1 tsp salt, 1 tsp oil , add prepared noodles and boil it well add more water to cool down and strain it. add again more water and strain it.
and add this to the prepared gravy. and mix well.
How to prepare gravy mix
I have no cabbage, spring onion, capsicum at that time
So I used what is in my stock
I used 1 big brinjal, 1 cucumber grate all these vegetables, and squeeze water from its,
4 tomatoes cut it in square and squeeze its liquid
1 onion cut in square pieces
5 greenchilly chop it
ginger garlic green chilly paste 2 tsp
corn flour 2tsp
noodles masala 1-2 tsp/hakka noodles masala ,optional add more taste
1/4tsp chilly powder, 3 tb soya sauce, 2 tb green chilly sauce, 2 tb vinegar , 1 tb sugar, salt 1/2tsp,
heat a kadai with 3 tb oil, saute onion, green chilly lightly then add tomato, then brinjal, then cucumber,ginger , garlic green chilly paste 2 tsp and saute well , add all other spices and sauces , vinegar, cornflour and mix well add squeezed juices of brinjal, cucumber, tomato to this add water 1/4 cup or more and make it juicy, not sticky, add sugar, salt, and prepared and cooked noodles to it boil it well add water if necessary , adjust taste by adding necessary sugar, salt or masala , cook for 3 minutes so the noodles will hold the masala
Serve the noodles with some greens.
