Mixes for mayonaise

Crumbed Mushrooms with Blue Cheese Sauce

INGREDIENTS:

2 cups Fresh White Breadcrumbs
3 TB Parsley, chopped
1/2 t Salt
3 cups Button Mushrooms, cleaned
Water
3 TB Flour
2 Eggs, lightly beaten, in a small bowl

Oil for deep-frying

SAUCE:

1/2 cup Blue Cheese, crumbled
1 TB Chives, chopped
1 TB Onion, finely chopped
1 cup Plain Yogurt
Black Pepper, to taste

DIRECTIONS:

1.) Combine the Breadcrumbs, Parsley and Salt in a small bowl - set aside.
2.) Dip the Mushrooms in the Water and immediately dust with Flour - dip into the Egg and finally in the Breadcrumb mixture - place on a wax paper lined baking dish and place in the refrigerator for about 10 minutes.
3.) Meanwhile heat the Oil for deep-frying - fry the crumbed Mushrooms in 3 or 4 batches until golden {about 3 minutes} - place on paper towel to drain and transfer to a serving dish.
4.) Sauce ;  Blend together all the ingredients for the Sauce in a blender and season to taste with Black Pepper - pour into a serving bowl {you can make the sauce in advance - it will only thicken slightly when chilled}

Serve the Crumbed Mushrooms with Blue Cheese Sauce on the side as an appetizer or a snack.

  • 1 cup mayonnaise
  • 1 cup crème fraiche
  • ¼ cup buttermilk
  • ¼ teaspoon Worcestershire sauce
  • 1 teaspoon sugar
  • Pinch cayenne
  • 2 dashes Tabasco
  • ¼ teaspoon Colman’s mustard powder
  • ½ teaspoon salt
  • 1 cup crumbled, good-quality blue cheese
Instructions
  1. In a large bowl, combine all ingredients except blue cheese and mix well with a wire whisk.
  2. Fold in the blue cheese and serve.
