Lemon rice Is a popular rice dish in southern parts of India.It is very easy to prepare, so that if you are in a hurry, if you travel, or else have no enough side dishes with you, lemon rice is the best choice.Lemon rice is made of cooked rice is mixed with lemon juice turns into a tangy flavoured rice dish.Potato fry and curd are the best accompaniments of this delicious dish.HOW TO PREPARE
Basmathi rice- 2 cups/tea cup
Salt- as required
Lemon juice-1.5 tablespoon-3tb
Ginger- a small piece,finely chopped
Oil- as required
Peanuts-2 tablespoon
Mustard-1/2 teaspoon
Urad dal-1 teaspoon
Curry leaves- 2 sprigs
Dry red chillies-4 Nos
Turmeric powder-a pinch
Asafoetida powder- a pinch
Cook rice adding required water and salt.
When it is cooked well, drain it and set aside.
Squeeze lemon and prepare approximately 1.5 tablespoon of lemon juice.(If you prefer more tangy flavor or preparing this rice to travel ,you can add up to 3 tablespoon of lemon juice.)
Heat oil in a pan.
Add peanuts and roast them in a medium flame and drain on a paper towel.
In the same oil, add mustard seeds,urad dal,curry leaves,dry chillies,chopped ginger and saute for few seconds.
Bring down the flame.Add turmeric powder,asafoetida powder to this and stir for few seconds.
Now,add cooked rice to this along with fried peanuts.
Stir it and mix well.Drizzle lemon juice to this and mix well with the rice.
Switch off the flame after a couple of minutes
.Lemon rice is ready.
Serve with potato fry, pickle, pappad, curd etc.
Tips
I used small teacup to measure the rice.
You can adjust the quantity of lemon juice according to your taste.
You can add chopped coriander leaves,fried kadapparippu etc to this to increase the taste..
