Eating alot of garam masala in foods, not suited for me, so I like to make fish type curry for chicken, to avoid coconut grinding is an extra work for me, I added tomatoes for gravy. anyway the recipe is challenging and a very good tasty dish, I never tasted it before from anywhere.
chicken 250 gm
tomato 250 gm
ginger 1/2 inch
garlic 6 cloves
garlic leaves -1 stem(optional)
green chilly 4
crush ginger garlic green chilly in chutney jar of mixy
1onion
grind 250 gm tomatoes or 6 medium tomatoes
soak 4 pieces of kudampuli/kokum/ gambuchi
heat oil in a wok add sliced onion,1t salt and saute add jeera 1/2 tsp, clove2, black pepper 6, cinnamon 1, bay leaf 1 cut into 2 pieces, add ginger garlic green chilly, garlic leaves paste, and saute, add 1/4 tsp turmeric, 2 tsp chilly powder,chicken and saute add tomato paste, kudampuli and saute add necessary water salt and cook covered, garnish with coriander leaves.
Tips - can make this kind of curry with chicken, fish, egg, paneer, etc
After finishing the chicken pieces in the gravy, I added hard boiled eggs cut in half to the gravy and boiled.

Add eggs last after cooking the gravy not add chicken
for paneer curry
add paneer cubes after cooking the gravy and cook the paneer.

add fish after sauting the green chilly garlic, ginger paste and tomato paste

METHOD:

2. Soak it in water for an hour or two, the color of the water would have changed.
3. Dried kudampuli which is hard also will turn soft.
4. Boil jaggery in water till it is dissolved and then strain to remove any dirt. Add the required amount of soaked kudampuli water to it and boil for a few seconds.
5. Pound cardamom and dried ginger in a mortar and pestle coarsely. You can also grate in nutmeg if you like, I usually don't add nutmeg.
5. Add the pounded mixture along with a pinch of salt and switch off.
6. Strain and enjoy your drink.

pressure cook soaked rajma/white chana to this gravy and boil can avoid kokum or reduce it to 1 or 2 pieces

a recipe using natural kudampuli below, it can be used for treating stomach ulcers, intestinal worms and also for treating indigestion andinflammation of the stomach.
METHOD:

- Try to incorporate kudampuli in regular cooking...
- I have not given any exact measurements as the amount of sourness and sweetness to be added will vary greatly from person to person. Try with very little amount of kudampuli soaked water, you can always add it later if the sourness is not enough.
