Tricolored Dhokla
This Republic Day, serve your family this tricolored Dhokla and see the sparkle in their eyes...I am sure all are going to love it!!!
Ingredients
Besan -2 bowls
Rice flour - 2/3 bowl
White vinegar -9 tbsp
Salt
1)Spinach puree for green colour ( I strained the puree and used only water)
2) pureed and strained Carrot, small piece of beetroot and half tsp haldi for saffron colour

RECIPE
Prepare all the three batter by adding salt, 3 tbsp vinegar in each batter and respective coloured water.
Just before steaming add one tsp eno in each batter. Steam in a greased container for 6-7 minutes or till done, check with a toothpick. Let these Dhokla cool completely.

For spicy water
Heat one tbsp oil in a wok, add one tsp mustard seeds, let these crackle, add few curry leaves and 4-5 slited green chillies, cook for half a minute, add three glasses of water, salt, sugar and lemon juice, let it boil for 10 minutes. Let Dhokla and this spicy water cool completely. Pour the water on Dhokla, keep in fridge for some time and enjoy with green chutney or ketchup.
Note:- I applied green chutney between the disks of Dhokla to keep these attached with one another.
