Just fry Soya Champ sticks in the warm oil and them make gravy as we normally make for preparing curries using chopped onions saute them in some oil in cooker when it is pinkish brown in color add garlic and ginger paste as per your consumption then fry the mixture again for 5 to 10 minutes then add turmeric powder,Red chilli powder,salt then chopped tomatoes or pureed tomatoes fry again for few minuted then add water in mixture as per gravy required thick or thin cover the lid of cooker get 3 to 4 whistles then open the cooker and add Soya bean champ sticks fried in gravy garnish with chopped Cilantro leaves and serve.

Ingredients:
Mutton ribs or mutton with bone – 500 grams
Onion paste – paste of 4 medium sized onion.
Ginger – garlic paste – 3 tablespoon
Kashmiri red chilli powder – 2 tablespoon
Turmeric powder – ½ tablespoon
Raw papaya juice – 1 cup.
Cloves – 4 pieces
Cardamom – 4 pieces
Cinnamon – ½ inch stick
Shahi Jeera (Aniseed)– ½ tablespoon
Bay leaves – 4 pieces
Sattu (Roasted gram flour) – 2 tablespoon.
Oil – 25 ml.
Ghee – 2 tablespoon
Kewra and rose water – few drops (Optional)
Directions:
Wash the mutton pieces under running water once, drain the excess water and then keep it aside.
Take all the dry spices i.e. cloves, cardamom, cinnamon, mace, nutmeg and shahi jeera in a grinder and then grind into fine garam masala powder.
Now heat oil in a thick bottomed pan….some people prefer cooking mutton in pressure cooker but for cooking authentic chaap, you need a little patience. Once oil is heated up, add the bay leaves followed by onion and ginger garlic paste. Saute for 3-4 mintues and then add red chilli powder and Turmeric powder. Mix and sauté for few seconds.
Add the mutton pieces and mix. Keep the flame high and fry the mutton pieces along with the masala. Mutton will slowly start changing the color from whitish brown to golden brown.
Now add the papaya juice and salt and mix well. Cover and cook for about 30 mintues. Keep stirring in between.
After 30 mintues or so, add the dry powdered garam masala and sattu. Mix well and sauté for a minute.
Pour 2 – 3 cups of water, depending upon how tender the mutton is cooked. Mix well and put a cover. Cook on low heat for about 40- 50 mintues.
Once the mutton is tender, check the seasoning and the gravy required. Finally pour ghee over the hot mutton chaap and mix. Serve with Biryani or roomali roti.

Soya chaap
INGREDIENTS
1 1/2 cup - soya chunks
1 - onion, medium sized finely chopped
1 cup - potato, boiled and mashed
1 tbsp - ginger garlic paste
1/2 tsp - Red Chilli powder
1/2 tsp - Garam Masala powder
2 tbsp - Coriander leaves
1/2 cup- sabudana (soaked)
1/2 cup- sabudana (soaked)
1 cup - bread crumbs
Oil - 3 tbsp or as required to toast/deep fry
Salt - to taste
For coating:
2 tbsp - maida
METHOD
Step 1. Wash and soak soya chunks for 1 hr and then boil until soft. Wash it well at least twice to get rid of the raw smell.
Step 2. Drain water completely and squeeze to remove excess water.
Step 3. Now in a food processor add mashed potatoes, soya chunks, soaked sabudana, chopped onion, coriander leaves, red chilli, garam masala powder, required salt and

Step 5. Make the coating ready by spreading maida in a flat plate.
Step 6. Make small oval shaped patties.( you can bind it on top of the ice cream stick also to give a look of chaaps )
Step 7. Fold it in the maida until coated well on both the sides.
Step 8. Heat dosa pan with oil and cook it on both sides until golden brown.
Serve hot with ketchup or green chutney.
For soya chop curry
Ingredients for Soya Chaap with Gravy
Soya chaap - 3-4
Onion - 1,finely chopped
Tomato - 3-4,finely chopped
Ginger and garlic paste-1 tsp
Green chilly - 1 piece, chopped
Cream - 50 grams
Oil - 3-4 tbsp
Green coriander - 2-3 tbsp (finely chopped)
Asafoetida - 1 pinch
Cumin seeds - 1/4 tsp
Turmeric powder - 1/4 tsp
Red chilly powder - 1/4 tsp
Garam masala - less than 1/4 tsp
Coriander powder - 1 tsp
Salt - 1 tsp (as per taste)
How to Make Soya Chaap Curry
Step 1. Cut soya chaap in 1-1.5 inch chunks.
Step 2. Heat oil in a pan. Place chaap chunks in hot oil. Fry the chunks until they turn slightly brown in color and take them out in a plate.
Step 3. Finely grind tomato to make paste. In oil, add cumin seeds and saute for while. After sauteing cumin seeds add asafoetida, turmeric powder,coriander powder. Sauté the spices for few minutes and then add tomato and green chilly paste. Also add red chilly powder. Sauté the masala until oil starts separating from it.
Step 4. When oil starts separating from the masala, add garam masala and cream into it. Stir constantly until masala simmers. After masala starts simmering add 1/2 cup water into it and stir constantly until gravy comes to boil. Add some green coriander in the gravy and mix.
Step 5. When gravy starts boiling add salt and soya chaap into it. Mix well. Cover the curry and cook for 4-5 minutes on low flame.
Suggestion:
After adding cream in the masala, stir constantly and cook until it starts simmering else cream may splatter. Also add salt later, as adding salt with cream can splatter it. Soak sabudana in advancefor that... In half cup sabudana use 1\2 cup water for soaking
