Vattayappam

raw rice 4 cups/1 kg
coconut 1 big
Yeast 5 gm/1tsp
sugar 5tsp
salt 1/4 tsp
heat 1/2 cup water in microwave for 20 seconds or luke warm add yeast to this mix well. cover for 30 minutes. it will rise

Soak raw rice for 8 hours or over night
 grind with minimum water
To make kappi
Take 4 tbsp batter from it and mix with 2 cup water and cook it thick, and cool
grate coconut add this kappi to it  and grind well, add salt, sugar yeast, and grind well.
Mix rice grounded with this, if it is not thick for vattayappam add little rice flour to make it thick

For vellayappam/ appam/ palappam make it like dosa batter
for vattayappam add more sugar,
ferment for 8 to 12 hours or till rise
and make vattayappam, appam, palappam, vellayappam
