Tomato aloo egg curry with jeera roti

7-8 tomatoes slice and grind
take stems of coriander bundle, slice and grind
boil 10 eggs and cook, cool and remove shells and cut in the centre
take 2 pototoes and  chop in medium cubes
slice 1 big onion
ginger 3/4 inch, garlic 8cloves, green chilly 6
clean and slice and grind
Heat oil50 gm add 1tsp jeera, 1/2 tsp methi, 1/4tsp black pepper, 1 cinnamon, clove 3,star anise1 and saute, add onion and saute light brown, add 2 tsp chilly powder, 1/2 tsp turmeric powder , ginger garlic paste with coriander stem paste  take water from  the paste and  add and saute. add tomato paste, and add the water from the   paste add potato pieces boil cover and cook till potatoes and masalas cook and oil seperates add necessary water and salt, 1/8 tsp sugar, and boil. garnish with corinader leaves, top with cooked and sliced egg, top with gravy on each  egg pieces.

good for  roti, rice

How to make good rotis

jeera/ajwain/kasoori methi roti

Take a big bowl, add 1tsp salt, add jeera or ajwain1 tsp or kasoori methi 2tsp, add 2tsp oil add water 1/ 2 cup add  4 handfuls of atta and mix well, add necessary water and atta for kneading properly, after 30 minutes make rotis
heat tawa smoky  and cook rotis adjust flame, put 2 tsp oil on each side and cook with oil, the rotis will be crispy
1 hand ful atta makes 3 rotis,
